They vary year-to-year on quality and depth, and it really comes down to what school and division environment you want (Pepperdine as a small D1 or the various NAIAs). Clearly you want to stay close to home, so the CA schools are probably off the map. There's not a lot of true insight to gain here (Letrsun) regarding team quality. Just look through the schools season results and understand the depth. A decade ago I was running 26's and was the 8th man on a team listed above. On many of those teams, i'd be top 3-5. Go meet the team and run with them.
Plenty of other religious schools out there, but they're not going to have the religious aspect (small groups, weekly campus worship, required biblical classes, etc) you're looking for. Most are Jesuit:
