With a huge 3:00 rest those 800s will be much faster than 5k pace.
Do 6x800 with 1:00 rest and we will be looking at your 5k pace. Or 5x1000 with 1:30. Or 3x1mile with 3:00.
I understand that doing that workout now with short rest would produce slower repeats that are equivalent to current 5k performance. I usually saw a workout with repeats of 800s as something that could be achieved later in the season.
My point was that to progress those 800s so that they are closing to a goal 5k performance (and as I noted in another post, you have to have a mix of different work).
If I was going to map out a general plan over the course of 6-8 weeks (assuming a base period has been established), I would generally start looking to do two main workouts each week (in addition to regular mileage and long runs):
Week 1
6x800 in 2:50 with 3:00 rest.
20 minute tempo run or the equivalent in cruise intervals
Week 2
4-5 sets of 400 @ 5k pace plus 1200 at a steady run pace.

3 sets of 2x200 at mile pace followed by a 1200 at tempo pace
Week 3
6x800 in 2:50 with 2:00 rest
20 min tempo run or cruise intervals
Week 4
5-6 sets of 400 @ 5k pace plus 800 at a steady run pace
3 sets of 3x200 at mile pace followed by a 1200 at tempo pace
Week 5
6x800 in 2:50 with 1:00 rest
20 min tempo run or cruise intervals
Week 6
3-4 sets of 800 @ 5k pace plus 1200 at a steady run pace
3 sets of 4x200 at mile pace followed by a 1200 at tempo pace
All I meant is progressing the workouts so that the goal pace becomes the race pace. Granted, things become different on different schedules or if there are races mixed in. I would use a 2 mile cross country race early in the season as a substitute for 800 repeats. Or use a meaningless 5k dual meet for a tempo run. And I would clarify that I would often take longer to progress workouts because I wanted to insert progression runs and other types of tempo runs in the course of a whole summer and fall to work with.
