Thu: 3x2m @ 10k pace with 2min rec
Fri: rest
Sat: 12m
Sun: rest

Add another day of easy running on Fri instead of the rest day.

yeah, 2 off days is too much. make one or both of those recovery days.
also, 3x2mi w/ 2min rec at 10k pace would be an incredibly hard workout. if you're doing 3x2mi in 11:50ish, you should easily be under 37.

Agreed. If I were doing this I'd probably do it as 2 mile tempo, 2 mile tempo, 2 mile at 10k pace.
Switch Tuesday and Wednesday.
