Vader defeated 2 Sith, 1 Jedi, 1 Luke Skywalker, and lost to 1 Jedi and 1 Sith. Easily the best record of any Sith or Jedi considering the Sith are far superior. And he was the only Jedi to defeat the previously undefeated Dookoo, who was 3-0 against Jedi up to that point.
If Vader had ever tracked down Yoda, he would have killed him, easily.
You're basing that off the movies only.
The best Jedi Swordsman was Obi-Wan who didn't "lose" to Vader as he "allowed" Vader to strike him down.
As far as pure force manipulation, there are plenty of Jedi that moved entire moons and pulled entire Star Destroyers that were in orbit.
These are all canonical Jedi as well so they are all very relevant.
Luke Skywalker is far from overrated as when he ascends to mastery he rebuilds the entire Jedi Order from nothing.
Its easily a Sith Jedi that is the most overrated, Darth Sidious is brought down by a ailing man in a suit and Mace Windu makes a fool of him about two decades prior. Vader is easily bested by a aging Obi-Wan when Vader was easily in his prime in both ability and swordsmenship.
Palpatine/Vader/Dooku are by far the most-overrated Jedi/Sith.
