Legal sea foods is in 11 states if that counts. They are awesome for a chain, and even compared to non chains. Most west coasters probably have never heard of it.
Also Nando's would be up there for me. There are only 8 in the US, but they are in 30 countries and expanding. Love it there.

That menu is like 25 pages long. Definitely a good choice.
Chipotle came to mind first, but eventually I'd probably get tired of the limited menu. It'd take quite a while though.
