I was just there a few weeks ago. It really depends how far you want to travel. Red Rock canyon has some great hiking trails & is only about 20 min. from the strip.
The Hoover Dam is worth seeing if you've never been there
(abou 45 min drive). Also golfed at the Callaway Golf center, which is off of the main strip area.
UNLV's track is about a km or so off the strip.
Nothing like doing a track workout in the middle of hell.
If you like Thai food, eat at the Lotus of Siam off Sahara. It's inexpensive, authentic and the best meal I've ever had. Gourmet magazine has declared it the best thai restaurant in north america...
Red rocks is cool, you can run or drive the 9 mile loop that goes through the park. Watch out for the donkeys.
Shoot a machine gun! there are a bunch of awesome gun ranges around vegas where you can shoot automatic weapons after only a brief orientation. I'm not even a big gun guy and I had a blast.
Rent a boat/jetski on lake mead. Bring cold beer, its very hot.
Hope that helps a bit. I'm not really sure what you're into but everyone can have a good time in vegas.
PS. the running sucks in Vegas.

Can't jet ski on Lake Mead anymore. Park Service made it illegal about 4-5 years ago.

Loop around red rock is 13, not 9. Not saying that to be a jerk, but if someone was planning a run out there, that 4 mile difference could really hurt you if you are not planning on it. The loop is a tough run, but it is awesome. Go to Texas de Brazil at townsquare. Costly, but its one of the better places to eat in vegas.
