It doesn't matter what you grill your meat with. What matters is how hot, how long, and how often.
There is a LOT of research on medline done by Harvard and others. Harvard researchers have concluded that colon cancer is roughly 70% caused by lifestyle (i.e., most of it is preventable), and that red meat intake 4-5 times per week caries of risk level about 3.5 times baseline. This is the number one risk factor and it dwarfs the genetic risk. How fat you are is also important, but exercise is an important negative risk factor.
One study gives a 29% increase in risk per 10g/day red meat for well-done/near well-done, but a 10% increase per 10g/day for rare meat. Grilled chicken is not associated with a risk of colon cancer and fish has a negative impact.
Grill promotes the formation of polycyclic aromatic hydrocarbons, also called PAHs. They are a family of compounds with fused benzene rings. The worse of the lot is benz(a)pyrene, which is very cancinogenic, and is formed during grilling.
The Wall Street Journal had an article on this in the last two weeks. Apparently, there is some risk. The recommendation is to pre-cook in a microwave (only for a minute or so) and then put on the grill. This reduces the risk greatly, but doesn't work so well at the beach.
