beans can get boring fast. Here's an idea-
Make burritos.
1) Buy Red Kidney, Small Red, and black beans in bulk (large cans or dried in bulk), all VERY nutritious, all very cheap
2) Buy Brown Rice in bulk (whole grain, quite cheap)
3) Buy some inexpensive, hopefully whole grain burrito tortilla wraps
4) get some condiments- low fat sour cream, salsa, maybe some avocados
Cook up the beans and rice (if dried beans, that will take awhile, but you just put them on and ignore them), throw them inthe tortilla, throw on some condiments, and voila.....you got a super-healthy veggie burrito. You could add some meat (maybe from your pork and beans mix....but how much fat is in that? ), but cooking the meat separately would make it more of a production and more expensive.
Anyway, beans are meant for burritos, and if you make your burritos right, they are super-healthy: good amounts of fiber, protein, whole grain carbs, and anti-oxidants, and they are low-fat. And they taste damn good too.
Problem solved.
