Unless you are going to be in a long drawn out fight BJJ isn't going to help you much in a bar fight. You need time to set up an arm bar or choke. Better to learn how to pull a guy's head down and knee him in the face or do a double leg take down and ground and pound.
You learn take downs in BJJ. The problem with wrestling is that you're one dimensional.
Considering your scenario: What if YOU get taken down by a good wrestler? What's your defense then? Knowing BJJ will not only allow you to take down others, it will teach you how to fight from the ground should YOU get taken down.
No, it doesn't take a long time to set up an arm bar. Anyone on top of me with an arm sticking out (and that will be anyone attemtping to throw a punch) will have his arm snapped in seconds. I also know how to control a person from the ground so he can't throw a punch. I can do a submission in several ways in seconds, or bump him off of me and mount him.
Knowing Muay Thai is great so you can keep it standing and work with some clinches. But, you never want to be one dimensional. Muay Thai guys get taken down all the time.
