Saucony Fast Twitch has a bit of stability, and I used to run in a pair with orthotics waaay back. Not sure about the current models.
I have a pair of Brooks Hyperion, and you could probably order up a 1/2 size and run with orthotics. Basically neutral though.

To me, the Saucony Endorphin Pro 2 is a stable shoe and should easily accomodate a 3/4 orthotic. I haven't tried the other carbon plate shoes, but I use it for intervals on the track and it seems stable enough to me. Weight is 7.2 ounce in size 9.5. I don't know if the Pro 3 is better than the Pro 2 so you'd need to find a review to compare them.
Brooks Hyperion Elite 2 is probably the most stable "super-shoe" although I don't know how accommodating it is for an orthotic.
Saucony Endorphin Speed or Pro (v1 or v2, not v3) are pretty stable and should fit an orthotic unless you have a wide foot to begin with.
somebody else mentioned the Craft brand and I will say that their uppers are spacious and you could definitely fit an orthotic in them. I've only worn the Pro Endurance model which doesn't have a plate but does use the super-foam and would make a good racing shoe despite it's weight being around 9oz
