Which of these do you think is best to help me improve:
-12x1k at 10k pace
-6/7x1k at 5k pace
-4/5x1k at 3k pace
all with about 2’ rest
Also let me know if any of these seem too difficult or if I could challenge myself to do more

Where do you seem to be weakest in your races? Endurance, power , turnover, form, courage etc.?
It depends on you as an athlete. You need to be able to ask yourself questions like, “what does my mileage look like?” And “would I be able to run a better mile or 10k tomorrow?” Etc.
Someone running 70+ miles a week with a 32:00 10k and a 4:40 mile is going to want to work on Vo2Max and anaerobic stuff to improve their 1 mile thru- 5k. They clearly have lots of aerobic endurance but may struggle with the speed component required to run their best possible 5k.
On the other hand, you may have someone running like 30-40 mpw, has a 4:25-4:30 mile, but would struggle to go under 34:00 if even that for 10k. That persons 5k would be best benefited by doing higher volume longer rep 5k-10k pace type work to improve their endurance.
Which one of these scenarios best describes you? Don’t worry about the race times, it’s just to put it in perspective.
