His times in the PPMarathon say so. Racing on a smoky day in 2020, his time for the ascent portion was only 30 seconds behind the 2019 PPAscent winner, and only 12 seconds behind Killian Jornet's ascent portion when Jornet won the Full in 2019.
For endurance athletes, it is very doable to eat very little carbs. 80-90% of training being low intensity, which means you are utilizing fat as a energy source. Outside of hard workouts, if one wanted to, could be low carb as a runner. I've messed around with this for marathon training(though not being very strict, but for me when doing higher mileage with much of it being slow jogging, replacing a bunch of carbs with good quality fat and protien seems to help a lot) and has seems to help in the latter stages of the marathon. I would recommend starting off morning runs fasted and see how one feels from there once they adapt to it.

Rather, over the last two years, he has been on an incredible ascent in fitness. He is much fitter than he was in 2019.
He had a long period after college where competitive running took a back seat to starting and raising a family. Even in his latest build-up starting 3 or 4 years ago, it was plagued with injuries. In 2020 he has had a pretty good stint without significant injury, and his fitness has greatly improved.

I already provided clarification. Seth's forte is ascending mountains. He is stronger ascending rather than descending. That said, in 2020, he set the PPMarathon record for his age group.
The only people that consider PP marathon an ultra are people who don't run ultras. Further I find it really hilarious and ironic that a place such as LRC where people hate on actual ultra runners for being too slow that they have to compete in niche ultra races fawn all over a guy whos claim to fame is winning a single race that is even MORE niche and unique than even most 100 mile races.

Nope, Pikes Peak Marathon is a Marathon and not "technically" an ultramarathon.
This thread is funny to me. Seth Demoor is not elite. He is a very good amateur runner. He is a professional YouTuber. He is also not an ultra marathoner. He is a good trail runner, not an elite one. If he would have gone to the Azores like some people wanted he would have gotten humbled. I swear some people think running on trails, no matter the distance, makes you an ultra runner. With that said who really cares what he eats?
