Agreed. Another low tech option would be to build a 6 foot long slide from the back of the counter to the front. Pizza box just slides down a gentle slope across the counter, hits a little stop at the end. Customer picks it up and walks out. They could even have it go out the door if they don't want customers inside.

You are basically describing a normal pizza handoff. It’s not like pre-COVID I would ask for my pizza, the guy grabs it, then we slow dance and make out for 15 minutes. I interact longer and more closely with the checkout lady at the grocery store and we don’t contact trace that.
Here they hand it to you and also the waiting areas can be very small, right by the counter (which is where they have all of the salads and the till, they often stand there) so you can be by them for quite a long time (average wait, maybe 10-15 minutes).
Best of all would be for people to get over their scared little selves and stop acting like a flu bug is the end of the world
