Like if I ran at a pace of 8:00/mile for half an hour and my heart rate was 150bpm, is there a calculator somewhere I can plug those numbers into and it will give me an estimate of what my vo2 max is?

No. Pace only correlates to VO2Max by an assumption of an efficiency number, even at that it is a fairly weak correlation.
About the only pace (velocity) that is even close to being capable of giving you an estimate would be your Vo2Max pace, which you would get with an ~9 minute time trial.
That vvo2Max would then correlate to your max heart rate. But if you wanted to take X heart rate for Y minutes at Z pace and then have it spit out an Vo2max, then there are just too many weak correlates to expect the results to be even useful, much less accurate.
It would be far, far easier to run the time trial and/or just go get tested at an exercise lab.
