Does anyone have ideas for some activities to do during the summer to cross train besides the normal biking and swimming?
Going for long walks with your woman.
Any of those online or video workout routines, P90X, Insanity, Athlean X... they will all work you out in way different from distance running. Don't discount how tough they can be just because it's a packaged program.

2. I'd like to think I'm in good enough shape to where a walk isn't a workout

I prefer to train in the AM and keep the lady time to the PM.

More running.
We do gymnastics in the summer. I've noticed all the gymnasts in our school are strong runners as well. I think it must work the right muscles.
