I think it's weird that they don't mention religion.

They don't mention toilets either.
I don't remember seeing them eat, sleep or scratch their arses.
It's fiction.

Especially Vader with no real limbs left.
You mean like, the Jedi?

Actually, Star Wars is all about religion.Belief in the force is akin to religious belief. Han Solo is essentially an atheist who is skeptical of the force until he begins to see it for real. Two moments I remember from A New Hope off the top of my head:
Darth Vader: Don't underestimate the Force.
Governor Tarkin: The Jedi are extinct, their fire has gone out of the universe. You, my friend, are all that's left of their religion.
Darth Vader: Don't be too proud of this technological terror you've constructed. The ability to destroy a planet is insignificant next to the power of the Force.
Admiral Motti: Don't try to frighten us with your sorcerer's ways, Lord Vader. Your sad devotion to that ancient religion has not helped you conjure up the stolen data tapes, or given you clairvoyance enough to find the rebels' hidden fort-...
[Vader makes a pinching motion and Motti starts choking]
Darth Vader: I find your lack of faith disturbing
Chirrut and Baze in Rogue One are not force sensitive but clearly followers of the Jedi "religion" and will be referred to as Guardians of the Whills in an upcoming book. As has been mentioned, there is a religious undertone to the Force and Jedi. It doesn't look like modern religion with weekly worship and a structured church organization, but it does other features of religion: practitioners. believers, places of gatherings (Jedi Temple from the prequels and Rogue One), a battle of good and evil, the Jedi are basically monks (the clothing, the traditional hair, prohibition against relationships, etc.).
