I initially thought middle manager level in state government, but that won't work for you. High school teacher with lots of tenure. Baller benefits, low stress, almost no accountability, 3-month vacation, etc.
There's a guy who sells tacos on a food cart on weekend nights for $5. Every time I look down out my window there's a line of at least half a dozen people getting their post-bar tacos. I swear he serves 200 of those in one weekend night. 200 per night x $5 x 2 nights per week x 50 weeks per year = 100k, probably $75k of profit and little more than 10 hours a week.
