SC Barbecue Ads? Isn't that like Ohio advertising their coastline?

I'm obviously replying to a little punk that hasn't left his county. I'm from Tejas but will tell you that SC BBQ is pretty damn good. Their vinegar and mustard based sauces are incredible.

So I guess now would be the time for you to bash TX.

No, I love Texas brisket. I think it is great. I wouldn't call it barbecue but that doesn't mean it is fantastic.

I disagree about the SC slop. They ruin the character of the meat. It's like drenching a good steak in A1 sauce. I have no problem with you liking it, but I find it odd that the state would have an ad campaign based on their terrible excuse for barbecue. SC does many things well. I grew up in Charleston, for what it's worth. I am there quite often. I am no stranger to the state and their offerings.

I love that someone on LRC is trying to defend South Carolina barbeque, but it is pretty much a lost cause. Terrible compared to the glorious Lexington style. I am a western NC guy, but I like eastern as well. SC is just bad. Never had TX or KC. Are they even pork?

I do my own blends when I BBQ. Way better than those nasty local styles you're blabbing about.

Thanks for the plug! For the record, we get pretty good BBQ at Applebees and Damon's.

SC started putting mustard in their barbeque because they couldn't figure out how to cook their meat. They don't even slow cook it with wood. It isn't even barbeque.

Having competed in Memphis in May's World Championship BBQ contest, I can assure you that even though teams are from all over the country, and world, the teams that consistently win are the ones from in or around the Memphis area. Occasionally there will be someone from far away, but just to come to find out that they are using mid-south recipes.

But you hit the nail on the head. You can't win, no matter what kind of sauce you use, if it does not compliment the meat. If all you taste is sauce, you lose.
