It takes one week or about 0.23 months.
Starting as a non-runner at age 16, it took me 6 days. I ran 8 miles the first day, then I ran 9 miles a day the rest of the summer.
How did you not get injured?
This question is way too general to give a good answer. The answer will be much different for someone young and fit compared to someone sedentary and middle aged.
It also matters whether you mean getting to 50 MPW and holding for a few weeks or running 2600 miles in a year.
Someone young a fit could get to 50 MPW for few weeks pretty quickly, maybe a few months. It might take someone middle-aged and sedentary several years to get to 2600 miles/year.

I must be built well for running, and have reasonable running form. I didn't have my first overuse injury until 20+ years after I started running. I'm now 50, and I'm still running 80 mpw mostly on trails averaging about 9,000 ft of climbing per week.
My five current pairs of shoes have from 674 miles to 912 miles each in them, so I don't need fresh shoes to stay injury free, just good form. (That's not counting my newest pair that I scored a couple days ago, and have just one run in: a pair of adidas Boston 7s for $31.99. Outlet store FTW!)
