Seems OK to me, you can't fault someone for being idealistic and having well-off friends who want to fund that idealism.
Saving the world through sushi, a Prius, and barefootedness is laughable, but he's not harming anybody, nor is he forcing anybody to do anything against their volition.
Not at all my cup of tea, but IMO any derision he receives should be given in a decent way.
Save your real ire for government.
the whole sales pitch here is pretentious and ludicrous, practically a self-parody if not an actual self-parody, but the food looks good and kudos to him for making his own path.
Its nice to see an elite move on past the running world and not be out trying to self promote on a past running life. Running stores , speaking engagements, coaching , training programs, blogs, etc etc.
Move on and have another life beyond running, hopefully this is an example others can follow.
The Truth is that Jennings and Stember were leading the "youth movement" at Stanford under Lanana, culminating in them both making the Olympic team as juniors, Jennings in a ballsy upset. This was a year before Webb's watershed 3:53.It must be painful to be so wrong on a daily basis, you have my sympathy.

Sushi: raw fish and other ingredients, wrapped in a roll of rice or seaweed (usually).
Sashimi: thin slices of just raw fish. Sometimes garnished with something else but no wrap.

OK, Ok, it'll be the next PF Chang's or Bennihanas, as Americans flock to raw fish, all done with OPM (other peoples money). Seems harmless.

Sushi includes a wide variety of things, both cooked and uncooked. So yes, sushi can most certainly be cooked. Try and educate yourself before you look even more foolish.
