SweeTango when I can find them which is basically never. Then Honeycrisp.
Fuji and Gala probably third. Fuji I like better but they seems to go bad faster than Gala, especially browning after sliced. So I call that a tie.
Pink Lady. Is also excellent cut up and mixed with yogurt.
Pink Lady. Honeycrisp and Jazz are good too, but Pink Lady is perfection.

^ This...hands down! Honeycrisp apples are simply the best. It's a matter of fact, not opinion.
Tried a Honeycrisp apple for the first time several years ago, and now there is no other apple that even merits discussion. Compared to Honeycrisp apples - even the hot house ones you get in the off season - all other apples taste like cardboard. So now I eat Honeycrisp or nothing. You all would be wise to do the same.
For reals? I always refrigerate my apples. What harm does it do?

...and no one from western New York would say about themselves that they're from "upstate" New York. So you must be from somewhere east of Syracuse.
Around me in western New York (and it seems to vary quite a bit intra-regionally on top of that), it's all about golden delicious, granny smith, and red delicious. Honorable mention to cortland. Yum.
Actually, I am from western NY but no one other than people from western NY knows what western NY refers to.
