If you have things left to take you can always come back and take them later on. I was a finance major and had never taken a single science course other than high school bio until I came back to school at 28. Remember that if you decide to apply after a year or more off you will need to relearn everything in order to take the mcat anyway.
I've taken both physics and gchem already and am halfway done with bio. The way I planned it was to do one science each year, so I would be done when I graduate and take the MCAT the summer following graduation. If I decide to leave the rest of bio and orgo for post bacc studies, I could do another minor instead (like math, for example).
