Values such as your height and weight are irrelevant since VDOT is a performance index. It is based on race performance and thus takes everything into account from weight, height, VO2max, running ecomony et cetera.
The performance indicator on your Garmin is only a guesstimate. I wouldn't use that as my main performance indicator.
