Belmont Plateau, Van Cortland, Stupid Indiana State, Franklin Park, Whatever they run at the short Notre Dame meet, Stanford, and crappy North Carolina courses.
Do some research on the Hereford course in Parkton, MD. Centrowitz Jr. ran only 16:01 (3 miles) and a 4:03 mile the same year. He ran near 14:30 on an easier course. Very difficult to develop any momentum at Hereford.

MT. Sac, Woodbridge (surprised this hasn't been mentioned), VCP, Holmdel. OP said famous.

I don't know about "famous" but the most "infamous" XC course in the USA has to be the course at Davis-Elkins College in West Virginia.

University of Maine. Don't remember the course name but it was awesome.
Mt. SAC (~ 15000 kids at last year's Invite). Also hosts CIF-SS Prelims and Finals.
Woodbridge Invite is changing venues this year - now it's at Estancia HS.
Not Famous, but before you ever say Crystal Lake, IL is the toughest high school course....Have you ever run Seaside, Oregon?
Oeiras Internation Cross Country in Portugal, that's the most difficult I think, or another course I know that is always uphill and full of mud.
Centro's 16:01 (after falling down) was in the fall of his senior year, the same year that he went 4:03 in the 1600 at MD States

The one in Louisville is at Tom Sawyer State Park. It's a fun and very fast course. Great finish area.
McAlpine is a narrow, crowded course without enough room for a major meet. It's flat and fast and fairly boring. Yet somehow, I really like that place--a lot better than Wake-Med Park.
I can't believe no one else has said Portland Meadows. More people argue about that course on a yearly basis than any other.
Tom Sawyer park at Louisville is easily the best XC course I've run in college. It's fast without being a super-boring golf course and it can handle large numbers without bottlenecking. Great course.
VCP 8k is supposed to be a great course too, but how many people run it?
The greatest cross country race ever held was IAAF WXC Mombasa March 2007. Over 100,000 people showed up.
The most famous annual cross country race is the Footlocker High School National Championships held at Balboa Park in San Diego. The media numbers are astronomical for Footlocker every year.
