gastronomus: the best way to eat veggies is sauteed in olive oil and butter.
cut broccoli, peppers, onions, carrots, green beans in large pieces
toss 1 or 2 cloves of crushed or sliced garlic and onions in hot fat
fry for a bit
Or for a complete meal, first heat some sausages (chicken/turkey sausage for lower fat) in the olive oil, remove sausage, add veg (almost any veg & combination is good here) and plenty of garlic. Slice sausage and add back in to veg. Toss with pasta, like penne or spirals or orecchiette.
Substitute canned beans like cannellini or chick peas for the sausage and it's vegetarian.
Not liking raw carrots is really weird.

Just buy those V8 Fusions...they have a serving of vegetables and fruit per 8 ounces or something ridiculous. I usually knock out a 46oz bottle in 2 days because they are so delicious.
I've walked around the gym before snacking on a sweet potato. No brown sugar, no marshmellow...just a backed sweet potato in my pocket. I know, I'm weird.

I have been making green smoothies for a couple of years now. Great way to eat more green leafy veggies (the most nutreint dense of foods) even things like Kale (pretty much the most nutrient dense foods and filled with anti caner micronutrients) by blending you are able to absorb more nutrients. Go to go to youtube and type in green smoothies. Be careful of things like V-8 fusion as it is not necessarily healthy. filled with processed sugar if I remember right. I guess it would be better than nothing. I do not think however smoothies should replace all your veggie consumption as it is good to chew. Try some Kale in those smoothies. sounds Gross but can be hidden with fruit like banana,strawberries, blueberries, etc.
This is a necessary topic of discussion. I also could not bring myself to sit on proper nutrition and eat more vegetables for a long time. I was moved by various convenient devices for self-motivation and fast processing of vegetables in the form in which I would like them to "eat", the same squeezer on. Not at all weird, except for carrying such a thing in your pocket, and incorrectly spelling baked...
The problem is that smoothie fans overlook the fact that liquifying fruits and veggies cancels out one of the most important parts of the digestive process which is mastication; plus your jaws miss the good workout chawing on raw fruits & veggies provides.
