Just wondering do most people take a total rest day each week. I'm doing about 50-60 miles a week and every time I skip a rest day I seem to get injured.

Some do take a day off, most of us don't. Sounds like you have already figured out that you need one.
I agree with the other guy who responded. I find the opposite of your result, which is that every time I take a rest day I get overly tight and injured. Even if it's only a 30 minute, hungover jog, I make sure to do something everyday; if not for the training benefit, then to not get injured. Whatever keeps you uninjured is probably best for you.
