When given the chance, I'd communicate career ambitions. Nothing helps a grad school program more, than great careers off of their education. Very often you read of grad schools calling back former students with current, high positions to delivery speeches. They use it as a recruiting tool.
I'm not saying to just blurt out that you want to be President of a Fortune 100 company (although maybe you should, I'm not sure). But let him know that you have plans to parlay the degree into something ambitious.

counselor programs are hurting because many are now 48 hour programs. I doubt you have any problem. Just be honest. Mostly if you don't say anything crazy you are in. It is more a formality to weed out weird people.

It's a school counseling program. I speak Spanish and am certified to coach high school cross country/track.
I have heard the like "well-rounded" people who can do a lot of things.
One thing that you should know if going into school counseling is that they frown upon coaching. It is considered a dual relationship. In other words they think you will be somehow biased towards a kid if you are coaching them. Kind of ridiculous IMO.
I am a HS counselor and coach. I had to just be a counselor for a short time before coaching. I had been a teacher/coach for many years before moving to counseling.
Some schools will be adamantly opposed to counselors coaching. The principal makes the decision so get in good with him/her.
