You cant see viruses. You 'see' a visual interpretation of what scientists have decided should be represented by the output of a scanning electron microscope.
Of course the whole stuff about viruses is a theory. So is the 'observed' behaviour of wave / particle duality.
However, both in the visual output of a SEM, and in the totality of virus theory, its all a pretty damned good fit and almost ideal and consistent interpretation of observations.
I certainly believe in the output interpretation of SEM representing 'seen' viruses, and also in virus theory.
I also believe that Newton's so called Laws do not fit every observation - especially as one approaches the speed of light.
I mean, sure, I take your point. And we can take it a step further: seeing is merely perception--the processing and translation of sensory experience into conscious experience--inherently limited by the neuroanatomical systems on which it's based. In other words, strictly speaking, what we see isn't reality.
But for practical purposes, human vision is an exquisite faculty, which, through our unique drive and ingenuity, we have come to apply to an enormously expanded range of scale, enabling us to see the f**king out of sh*t out of coronaviruses.
