Do you need an Excel file or a Hy-Tek file, because those are not the same thing. You may be in need of Hy-Tek Meet Manager if you are running and scoring the meet using Hy-Tek. Do you have that program?
You could make up an Excel file for them to fill in, but it's a lot more work for them and a ton of extra work for you if you then have to rewrite those names into Hy-Tek.
Your question is a bit confusing since you mention both HyTek and Excel.
If you get coaches to send you Excel files, you can copy-and-paste them into one spreadsheet. Then you export that from Excel as a comma separated variables (.csv) file. You can then import that file into Hy-Tek. Hy-Tek will list which lines on the csv it wasn't able to parse correctly. There should be Hy-Tek documentation on how to format the csv file. Working backwards from that, you can set up a blank spreadsheet to send to the coaches. Basically it will have columns for first name, last name, school, class, division, and events. Relays work a bit differently. It will take you some work to reassemble those files into a proper csv file (especially since many of the coaches will send you a crappy spreadsheet!), but it will be faster that manually entering everything into the Hy-Tek database.
However, I would encourage you to look into the various online entry websites. The coaches would do entries on the site. Then you just download a .csv or Hy-Tek file that is ready to go.

If you are a high school, middle school/junior high, college, or track club, you can use athletic.net for your meet registration and it is completely free and will download into Hy-Tek.
Thanks for all of the replies. I have Hy-tek and use DirectAthletics for entries. In DA once you pay you can no longer make changes to entries. I have a coach who paid up front in DA and now cannot make changes. Wanting to send the coach a file he could type in and I could import so he has to do the typing instead of me.
I have an excel file I used to use for meet entries, but I don't have it here at work. If you leave an email, I can send it to you when I get home around 6:15 tonight. There are a couple additional steps you need to take to import the excel data to Hy-Tek, but it's pretty simple.

In this case, is it really likely that he will be making dozens and dozens of changes that are worth all the effort?
It'd have him send it to me in an excell file so I can sort it, but that's it.
Why not use Google Docs? (Go to Google Docs, sign up and click "Create New" and "Form") You can easily design a web fill-in form that can be sent in an email or completed via a web page.
It uploads to Google Docs and coaches will be able to re-submit as much as they want.
When done, you can download as a csv or whatever.
I have used it for several similar things in the past like a homeowner's association fill-in form for contact info, etc.

Has anyone successfully used a Google Docs form to collect on-line entries and then import them into Hy-Tek MM? I have been thinking about doing this but it seems to me that you would have to input the athlete's name each time you enter them in a new event. If anyone knows how to make this work could you please share your form with me?

To save you a lot of time I would just suggest using milesplit or directathletics for your entries.
Very very cheap and easy to use.
However, if you are stuck on this idea. If you have the hy-tek software go to the import options and there should be an excel import template for you to send out to coaches.
Or just go to google and type in hy-tek import excel doc.

You just need to match the fields and output a semi-colon delimited file.
I had to figure this out myself. You need to create a TEXT file, not a database or Excel file, formatting with each athlete on a line like this (below; the 10 below is the grade). If you create a text file like this then in Hytek you go to File > Import > Semi-Colon Delimited Rosters/Entries.
