At the most basic level, I think the Endorphin Pro is a better marathoner, and the MetaRacer a better everything-shorter racer. In both bases, I think they are the best non-Nike options (i.e. the Endo Pro is the best non-Nike for 26.2, and the MetaRacer the best non-Nike for anything else). I haven't worn the AlphaFly, unfortunately, so I can't speak to that.
At a more granular level, I didn't do any track work in the Endorphin Pro, but even doing strides or fartlek, it feels disconnected from the road (as does, for example, the Next%). The MetaRacer feels much more like a track spike in profile, without such a harsh ride. It's almost a mashup of the NB FuelCell 5280 and a first gen Vaporfly. Perhaps just because I'm not used to the Next% (have only worn it once, and wasn't a huge fan of the 4%), I sort of prefer that more low-slung feel to a racer. I'm not kidding when I say the MetaRacer has a class-leading upper, either; I'll definitely wear it as a casual shoe when I'm finished with it.

It looks like Endorphin Pro/Speed are the only REAL Vaporfly competitors that will "save your legs" on an HM/FM. The others are more like glorified flats...

In some ways I'd agree with that. Endo Pro definitely comes the closest to the bouncy/high stack of the Nike.
ON has a new carbon fiber racer coming out as well... was very different and not stiff like the VF
