Cornering it is really the only method, although some you can approach really slowly and quick-snatch. If you lack a "corner" and can use a broom or something, you can "herd" them with the broom.
As for turning them upside down, that sounds like a neat trick. I'll try that. But for the OP, you can just hold them, covering their wings so they don't flap. Most chickens I've known our pretty docile. The kids carry them around all the time under their arms like they are carrying footballs.
