The answer is whatever it takes for the efforts to be truly maximal. The goal is total recovery for these.
A general rule for me when doing alactic sprints is 1 minute rest for every 10 meters run. So 3 minutes between reps, and maybe 5 between sets? (I don't see why you don't just do 6×30m with 3 mins rest though). Also probably use a standing rest
