there are different stsyles of Chinese cooking--chances are, if youre living in a red state, then youre not eating real Chinese food, but rather an Americanized style, which is not legitimate Chinese food.
The four most popular styles are Cantonese, Northern, Shanghainese, and Szechuan. Most American style Chinese food is based on Cantonese/Hong Kong style cuisine, and most Chinese restaurants in this country are of this origin. When you utter "chow mein", "chow fon", "dim sum", and "won ton," you are literally speaking Cantonese. Cantonese food is heavy on seafood, vegetables, and steaming. Though there are many greasy dishes too. But Cantonese is generally considered the healthiest. Cantonese cusisne is also light on breads and noodles, compared to Northern/Beijing style Chinese cuisine, of which the most popular dishes are Peking Duck and jiaozi (dumplings). And then youve got Shanghainese style, which hasnt really made it's mark in this country. Tends to be on the sweeter and oily side. Szechuan food--everything is littered with red chiles--Kung Pao chicken is Szechuan style. I dont understand this cuisine myself--all those peppers kill your taste buds.
Chinese food is no more bad for you than Italian or any other food is.
