No, that's not what people are saying. You are projecting. People have said that they feel the projects are pointless busy work (not hard, but time consuming with little educational value) or that they feel their child can learn more by them doing the project together, rather than having the child aimlessly work through the project on their own.
The other reason I saw mentioned was down the "competing with the Jones'" type mentality. It seems that some people feel that other parents are helping, and setting the curve, so they need to help or their child will be left behind.
Only one person remotely said anything close to a reason that the projects are "too hard". Read objectively.
