My workout last night was 3Mile, 2mile, 1mile with 3min,2min rest between at 15:45 @ 10mph @ 6%, 10:08 @ 10mph @ 7.5% and 4:58 @ 10mph @ 8.5%.
I've been averaging 80MPW. Is sub 1:09 possible ?

I'd say Yes. Aslong as you have did similar or few other workouts like this in the past weeks 1:09 is def doable if not a bit faster.
