I have been doing doubles about for times a week with a 5 miler at 7:00 pace around 11am, then another 6 miles at 6:40 pace around 3-4pm. Are these runs long enough to be doing doubles with?

sure. John Kellogg says running twice a day stretches your capillaries quicker and more efficient. Do doubles at any mileage. I might emphasis a long run though if you aren't doing higher mileage though.
As long as you are still doing the occasional real workout (tempo, long run, speed), then those are perfectly good runs. Plenty of time to get a little bit of recovery. I bet you feel pretty good on most of those runs.
ya, I usually get in around 9-10 on sunday(sometimes double here too) and throw in so speed work on one of the P.M. session of a double. Never have really progressed over 30mpw, so hoping these doubles and increased mileage can take me to the next level.
30 to over 60 suddenly, nice. If you stay healthy you'll see a big improvement. To improve chance of staying un-injured, sleep as much as possible and eat healthy.
Anything over 4 is good.
