So I do all my easy running between 6:15 and 6:45 pace.
Yesterday I did 2x800 with an 800 jog in 2:17, 2:11.
Also have done 8x300 with 90 second jog averaging 48.0.
PR is 4:12

Based only off of those times, you seem like you're in 4:12 shape, the 8X300s are at a faster pace than that, but your 2X800 is significantly slower, hinting that you don't have the speed endurance.
There isn't too much info to base this off of however, so I really can't be sure.
I'd say go for a 4:10.
Yeah 4:10ish but what the hell is that 2x800 session all about!??

No it's not - 4:12 is 2:14 pace.
Run your easy/recovery runs slower and you will run your workouts after, gain greater fitness thus race faster. If 6:15-6:45 is your easy pace I would argue you should be closer to running under 4 min. Also 1 workout doesn't tell the whole story- what is your weekly mileage like?
