I sometimes cook dinner and leave out overnight. I read where family eating spaghetti like 30 hours later all died. what is truth?

Like, yes.
Sure, there's no problem with leaving food out. Things like Milk and Yogurt actually test better and become more nutrional after being left out for extended periods of time allowing them to fully culture the beneficial bacteria.
If meat best to leave oustide the house unless it's a cold day
Why not just stick it in the refrigerator?
Of course it will be contaminated, but most likely not by any harmful quantities of nasty pathogens. It does matter what type of food it is, and what the temperature is like, but 20 hours isn't that long.
My sister used to live with a pair of Laotian siblings who would cook a large meal every so often, and just leave it out on the counter for days, feeding from it when they were hungry.
I wouldn't do that. The chances of food poisoning are pretty small, but the consequences can be pretty nasty.
I got food poisoning from some sour-cream and mayo based food that sat out for a few hours.

I only eat meat after it's been buried in the ground for several months. It does a fantastic job of tenderizing.
The risk depends on the type of food, how long it was cooked and the room temperature. Also it would help to know whether the food would be covered, plastic wrap/tupperware, etc, or whether it would be left exposed. Most bacteria grow best at 37 degrees Celsius, 98.6 degrees Fahrenheit.

What the hell is wrong with you people? Who the hell leaves food out overnight and then eats it the next day?
Food that is supposed to be refrigerated needs to be so, and if it's out for more than even just TWO hours, you run the risk of food poisoning.
Cooking it again won't always do the trick either as you may have to deal with endotoxins or exotoxins.
Nice.

Every college kid who's ever ordered a pizza has probably done this before.
FP, your recommendation of no longer than 2 hours is extreme; I'd say the window of 4-6 hours is safe. People, unless you're dealing with highly pasteurized foods, like butter - stick it in the fridge!!! Another exception is if you're curing meat in your smokehouse.
