As far as poetry about war goes, I think "The Centenarian's Story" by Walt Whitman is one of the best poems. It's about a 100 year old man who witnessed the revolutionary war and is now seeing the build up for the civil war. Here's a link to it.

One of my favorites is The Things They Carried. Also the movie Apocalypse Now is based off of the book Heart of Darkness by Joseph Conrad, which is also an interesting read. And Johnny Got His Gun is a classic anti war novel. All three will make you really ponder the ethical and moral responsibility that comes with warfare.
The Face of Battle, by John Keegan - about the experience of being at Agincourt, Waterloo and the Somme. Not exactly an anti-war book, but it sure made violence sound pretty sucky.
And I'm not sure every war book is anti-war. Ernst Junger seems to have had a pretty good time in WWI in Storm of Steel.
