If you grow the right crops you can live very well off the land.
Marketing however is very controlled and "cut throat".

"down there" implies a lot.
Ecuador or Argentina. I'm not against any other countries "down there" but those are tho only two I've looked at
I lived in Paraguay for a year and a half. Lovely country with great people. The climate is very hot, however, and Asuncion is not the best place to run. But you could make a life down there very cheaply.

Im assuming gringa because if she was spanish seaking latina you would already have her home country picked out as your destination. Just curious. If you want to farm,... many of the lands are incredibly fertile with year around growing seasons. I know one chicano farmer in mexico and a another who wanted to do cattle ranching in Colombia. They both suggest that especially with big operations the other farmers can be extremely jealous and competitive which really complicated their business , in the case of the cattle rancher he decided not to do his business there after all
