I cant find a pair of running shoes that are built low to the ground and allow plenty of wiggle room in the fore foot and feel comfortable width wise.
most racing flats and performance trainers tend to fit way too tight for me.

Have you tried Mizuno's Wave Universe 3? I haven't (have their cousins the Adizero PR and Piranha 1 and 2) but have seen then described as wide in the toe box more than once.
The Piranha 1 seems to me to have a roomier toe box than most very light flats I've tried over the years, though it's probably hard to find these days.
Not super-low to the ground, but the Mizuno Ronin is wider than a lot of flats.
I have wide feet (also a side effect of minimalism I think), so I already wear men's shoes, but still find many of them too narrow (especially Nikes). However, I am wearing the Nike Free 3.0 right now and they seem to fit okay. I've also had luck with the Asics Hyperspeed, Asics Pirahna, most Adidas AdiZero flats (I've had the RC and currently wear the Rockets) and New Balance RC152. Hope that helps a little.

I wear a 2e width and tried the lunarlite trainers and they were way to tight. Anyone know anything about how the Nike Free 5.0 fits?
the nike free really fits like a glove, but they're pretty pricey.

Hyperspeeds are pretty wide. Great shoe, my only complaint is the way the bottom is constructed in that pattern, rocks and other objects tend to get stuck in it during runs and I occasionally have to stop and pick it out.
