I lived in Springfield at one time. It has a running scene, but I was never involved in it. Ozark Mountain Ridge Runners, the area's (only?) running club has a webpage with lots of info.
As far as the Chinese food there, its all made to Southwest Missouri locals' taste (ie. lots of cashew chicken and greasy egg rolls). The city schools are decent on the whole.

Southwest Missouri State (SMS), now called Missouri State, (which sounds stupid), used to have a nationally ranked distance program, with many fine runners. Then they went D1, needed more money for football and basketball to compete at D1 level, and dropped X-C and track. Deplorable. Whether any good runners remain in the area, I'm not sure of, but I would assume so. Joe Falcon used to live and train there. It is a great area for distance running. Good luck. I envy you living in such a beautiful area.
I am not sure Joe Falcon lived in Springfield. He grew up in Belton and went to college at Arkansas and did the majority of his training in Fayetteville. Jason Pyrah lived and trained in Springfield though.
There are some good races in Sprinfield. Ozark Ridgrunners has a pretty decent race series. Check out
Great place, lived there for about 5 years but recently moved away. Running scene is pretty good, check out omrr.org and ozarksmultisportclub.org.

I live in Springfield. There is a running club but it's tailored towards recreational runners. There are lots of good races, Sunshine Run, Bass Pro 10K, Turkey Trot, etc... There are lots of good sports to watch as well with Missouri State (a worthy name) and several other colleges in the area. There are nearly 40,000 college students in the Springfield area between all the schools so always something to do for younger people. The old folks can go down to Branson just 30 mins away. Missouri State does have a running program, just not a men's one. They have women's cross country and track and are very good. Several of the men from the old program are still around and running and would be good guys to do runs with.
