Nobody wants decisions to be made "on the go" by ICE or sheriffs or bounty hunters or beat cops or whatever. Judges make these kinds of decisions. That is what due process looks like.
You can't just grab people off the street and send them to a prison in El Salvador. What if you are wrong? Shouldn't people be allowed to say, "Hey, you've got the wrong guy! Here's proof!" That is why everyone gets their day in court in a civilized country like America (but not in places like Syria or Russia or El Salvador).

The real problem is that we care about the process. The process needs to hold up thousands of times each day without making any mistakes. Think of what would happen if you were wrongfully accused of something! That would ruin your life. You should have the right to explain and defend yourself.
