Consuming more calories than you burn makes you fat, not carbs and grains.
I know asian people that don't exercise, eat a lot, but still look lean af. How does that work?
Asian people are often more small framed. Smaller skeletons etc. What you’re probably describing is someone who is skinny fat. Small frame and may “look” lean but would have a high body fat %. Also I think you could be exaggerating with how much they are actually eating unless you are monitoring what they are eating 24/7.

Came here to post this. Only thing I would add to your last statement is that the processed food developed also has to be low in fiber and water content, so not only is it addictive and calorie-dense, you overeat and can’t satiate. It’s designed so you’re hungry again shortly after you eat it.
Tastier, sweeter, saltier and less filling. All meant to encourage overeating.

Small serving size. Basically they don't stuff themselves like pigs.

Also car brain isn't so prevalent. In Asia, there are huge commuter networks and it can be the norm to walk to the station and then to work. A few miles of walking a day vice no walking really makes a difference.
