Asian people are often more small framed. Smaller skeletons etc. What you’re probably describing is someone who is skinny fat. Small frame and may “look” lean but would have a high body fat %. Also I think you could be exaggerating with how much they are actually eating unless you are monitoring what they are eating 24/7.

their food is overall less processed, also their meals are carbohydrate based with smaller portions of protein compared to american staples, meals based around large servings of protein

The average Westerner probably eats the same amount of noodles and rice (or potatoes) as an average Asian person but then tops up with 2 donuts, 4 beers, 3 Cokes and half a black forest gateaux per day. That'll be why they're fatter

Only thing I would add to your last statement is that the processed food developed also has to be low in fiber and water content, so not only is it addictive and calorie-dense, you overeat and can’t satiate. It’s designed so you’re hungry again shortly after you eat it.
Tastier, sweeter, saltier and less filling. All meant to encourage overeating.

European are generally slimmer than the Asian, west/east, depends completely what groups of people you compare, money plays a huge role.

Also car brain isn't so prevalent. In Asia, there are huge commuter networks and it can be the norm to walk to the station and then to work. A few miles of walking a day vice no walking really makes a difference.

Because there is seldom a 1:1 relationship between a factor and an observed result. Correlation doesn't equal causation etc etc.
