This is a good list. You can also consider Emma Bates and Keira D’Amato. They post fun facts and puns (respectively) with each run so depends a bit on your Strava taste
Eric Holt and Ben Allen from Empire Elite post all their training on Strava, if you're interested in what a couple of top milers are up to. Their posts are relatively descriptive too.
Both Emma Bates and Keira D'Amato are good examples of running their easy runs easy, with mileage and paces that don't look like anything special lots of days. Then every few days they'll knock out a run that makes it clear that they're truly world class.

I’m going to say you’re better off following better runners in your area rather than the pros.
I say this because most of the pros hide a lot of their data from the runs. I mean it’s cool that you did a 35mi run but what was your pace, HR, was there a climb. I like the more granular data.
