Em dashes can be used in pairs to mark off additional information that is not essential to understand the sentence. The way Rojo uses them, they function similarly to parentheses or a pair of commas.

Whether to use commas, parenthese or dashes in the context of this thread title is grammatical idiom, there's no single right (or wrong) approach.

FWIW I agree commas would be stylistically preferable in prose, but in a throwaway thread title on an internet forum, I think dashes are fine.

When you say "crocs" people think clumsy sandals with no back strap to hold them on. The back strap turns them into more of a shoe. Not a valid record.
