What amateur marathoner seeks out a marathon with hills? Maybe you do but most people in the US try to get into Chicago, CIM, or some other downhill BQ course. In Europe, you have a ton of fast courses to choose from. Kipchoge could have run a hilly 2:08 or whatever at any time in his career. He gets paid to chase fast times.
With that being said, it would be great for Boston or NYC to throw all the money in the world at him after the Olympics.

At first instinct, I would think that Kipchoge needs to seriously up his pain threshold to compete with the likes of Jim Walmsley at events 100k or up.
But then I remember London last year, where Eliud still ran 2:06 with a blocked ear in cold wind and rain. I have personally run with a blocked ear in cold wind and rain, and trying to keep the pace was legitimately one of the most painful experiences of my life.
So given that, I think Eliud could realistically be the best ultrarunner ever. He's tough as nails, and he's aerobically unparalleled. Give him a few months to recondition for that distance, and he'll take all the records.
60K is about 37 miles. One of the oldest continuously held ultras around is the NYRR 60K (formerly, Knickerbocker).
Just like messi could handle the premier league, I think kipchoge could likely handle the jump up to ultras provided his stomach could handle the longer runs. I'm sure it would just take some practice.
