The idea that many college grads have of "putting their skills to work" is a pipe dream. One of the first steps in the Acceptance stage of overcoming post-college depression is to give up the dream of ever using your educational background. Jobs such as Chemist, Geologist, Mathematician, Physicist, Historian, Statistician, Psychologist, Biologist, Political Scientist, etc., do exist, but in very small numbers (and require a Ph.D). There aren't as many related jobs out there, either. Take a look around and you'll see, for example, Chemistry grads competing for a $12/hr job cleaning beakers, because they're afraid of moving away from the real of Chemistry and feeling like their education was a waste.
