If you were so sure, you could easily summarize its argument in writing. Extraordinary claims require extraordinary proof. It's an extraordinary claim because of these indisputable facts:

1) a bicycle itself consumes no fuel and emits no carbon
2) a human emits carbon dioxide only from consumed organic matter
3) an electric bicycle is responsible for CO2 emissions.

So the claim depends on proving that

1) riding a bicycle makes a human emit more Co2, meaning they eat more, and
2) that organic carbon would not otherwise have been emitted as Co2.

Item 2 there is one of the most cynical lies advanced by veganists. CO2 is a natural byproduct of the decay of ALL ORGANIC MATTER. These people picking on cows, for example, somehow don't understand what happens to grass that isn't eaten by a cow. Guess what: same damn thing.
