Uhh. Chinese food so is much more than just dim sum and hotpot. Try visiting… and Hong Kong and Macau don’t count.

I'm open minded. Tell me what dishes I should try. I don't plan on visiting because I don't like the policies of their government. I have some Chinese ancestry. It's too bad. Before you say I'm xenophobic, I've lived in Vietnam and while I don't like some of their policies either, China is on a different level.

I lived there for many years… also lived in the US, Europe and elsewhere in Asia. What you hear in the west about China is mostly BS. I had many encounters with Chinese police and government officials, they were all completely reasonable, … i much prefer dealing with them than US police, IRS, TSA, CBP, etc. And this includes a time when a policeman made me buy him cigarettes in some small Hunan town.
Try to find some authentic Chinese restaurants… to be authentic they will have a regional focus… Hunan, Sichuan, etc. Don’t order “hot” dishes.

Ok. Thanks. I have lived in France, South Korea, and Brazil. On things that I hear being BS. I don't think that the Uyghur issue is BS. Maybe you think otherwise. Then there is Tibet. Hong Kong. Aggressive moves in the South China Sea. Aggressive moves on the border with India. Xi being president for life. All of these things add up to more than what small A authoritarian countries like Vietnam are doing. To me, they're almost on the same level as Russia. I'd rather not be a part of it. And people can say that the US does the same stuff with its wars. That's true.
I get that as a foreigner if I don't do anything anti-government I'll be alright. It's the same in Vietnam. Lately I'm into traveling in South America though.
